Celebrity Iowa pork goes to Hollywood

Organic Iowa ham will have another night at the Oscars.

For the second consecutive year, proscuitto processed by La Quercia Artisan Meats in Norwalk will be served during the post-Oscars Governors Ball as part of a menu concocted by celebrity chef Wofgang Puck.

Puck and his hand-picked crew will include La Quercia’s Prosciutto Americano on the antipasta platter, according to the Web site of the Academy of Motion Picture Arts and Sciences.

Herb Eckhouse, who runs La Quercia along with his wife, Kathy, said that until he did some research, he was unaware that La Quercia proscuitto was on the menu this year. It debuted during last year’s Governors Ball. According to the Oscar Web site, 80 pounds of La Quercia proscuitto will be used for bruschettas of figs, goat cheese and organic prosciutto

“I thought they had changed the menu,” Eckhouse said. “I’m really pleased. This is an organic product made from pork grown right here in Iowa. We’re trying to make Iowa known for something other than fuel.”

The Eckhouses opened their business in 2005 after spending five years studying the process for making proscuitto. Their education included a stint in Italy, where the pork is dry-cured for nine to 18 months before arriving on plates. The Eckhouses adopted those methods to more contemporary American production standards.
