Proof Restaurant sold to new ownership duo
Proof Restaurant, located in the Western Gateway at 1301 Locust St., has been sold to a new ownership duo – Zachary Mannheimer and Sean Wilson.
Mannheimer, executive director and founder of the Des Moines Social Club and Wilson, formerly the executive chef at Azalea, Kirkwood Lounge and Cuatro, take over ownership from founder Carly Groben, who opened the restaurant in 2008.
Groben also announced last February that she was closing Flour Pizza at 1220 Locust St.
Wilson and Mannheimer plan to keep Proof’s “Mediterranean roots in-tact, while exploring new ways of creating and plating dishes.” Wilson will be the main point of contact at the restaurant with Mannheimer lending his support to the wine list.
The restaurant will remain open despite the ownership switch, with lunch served Monday through Friday and dinner on Friday nights as it is currently. The duo, however, is planning an addition of Saturday evening dinners beginning in May.
“Lunch won’t be changing, though look for some new menu additions,” Wilson said in a release. “Carly has created an amazing community surrounding Proof. It is our desire to continue serving it.”
“The combination of progressive food, wine and the dining experience make this a concept unlike anything in Des Moines,” Mannheimer said in a release. “Our guests will think of dining as a full evening of entertainment.”
