The Flying Elbow in Marshalltown has won the Iowa Pork Producers Pulled Pork Madness contest for its classic pulled pork sandwich. According to a news release, the restaurant won the title of best pulled pork in Iowa in the NCAA bracket-style contest, which is based on public voting. Sixty-three restaurants were nominated to compete in the contest. The Flying Elbow started as a wrestling-themed food truck in 2017 and opened a restaurant in its current location in September 2021. The restaurant smokes an average of about 120 pounds of pulled pork a week. Owner Garrett Goodman said winning the contest is “a cool honor.” Goodman said pulled pork is a versatile product that can be used in different ways. “We try to offer the classic versions of things for customers, but then also, I like to take classic ingredients and give them new life,” Goodman said. The Flying Elbow’s classic pulled pork sandwich is served with pickles and homemade barbecue sauce on a Hawaiian-style sesame bun or Texas toast. The restaurant will receive $250 and a Pulled Pork Madness plaque. The restaurant also won the Iowa Beef Council’s best burger competition in 2022.
