Wattier Architecture has completed plans for a new restaurant and bar Jason Simon is opening in a former car dealership on the southwest corner of Des Moines and East Sixth streets. The restaurant will share the building with Bargain Basket, which recently relocated there from East Grand Avenue.

Andy Lorentzen, a designer with Wattier who worked on the project, said the concept of the restaurant is to have an open and unified space, which will require breaking down part of a wall that separated the dealership’s showroom and garage. The owner and chef wanted the kitchen to be the focal point, he said, and the restaurant will include a special table where guests can watch the head chef work.

“We didn’t try to cover up too much of the building,” Lorentzen said. “We used what we found there, and opened it up and unified it.”

Lorentzen was unsure when construction would begin, but said Simon, who is living above the restaurant, is doing a lot of it himself. The owner did not immediately return calls. S&S Building Fund LLC purchased the two-story building, located at 519 Des Moines St., in May for $730,000, according to the Polk County assessor’s Web site.
