Forbes’ Fred Minnick writes about why Chattanooga Whiskey founder Tim Piersant calls his product “Tennessee High Malt” rather than bourbon and how he came to make the alcoholic spirit. “Every consumer who walks in our doors, says ‘you’re not bourbon’ and that got us to thinking, ‘what are we?’ and we wanted to celebrate our roots from Tennessee, but we are not a traditional Tennessee whiskey,” Piersant told Minnick. Minnick also explains why, for several years, Piersant couldn’t make his product in Chattanooga and the lobbying the entrepreneur had to do to make distilling legal in the city.
